Spicy Sautéed Kale and Sausage
Serves: 4 | Prep time: 5 minutes | Cook time: 30 minutes
Ingredients:
- 1 large bunch of fresh Tower Garden kale, chopped
- 1/2 lb. Italian sausage (or any sausage you prefer)
- 1-2 Tbsp. extra virgin olive oil
- 2 garlic cloves, minced
- 1/2 large onion, chopped
- 1 tsp. red pepper flakes
- Kosher salt
- Black pepper
Instructions:
- In a skillet, warm the olive oil over medium heat for about 1 minute.
- Add the garlic, cook until aromatic (about another minute), and add the chopped onion.
- Reduce the heat to medium-low and stir occasionally for another 3–4 minutes, or until the onions are translucent.
- Crumble the Italian sausage and add it to the pan with the garlic and onions. Season with salt and black pepper.
- When the sausage is beginning to brown (about 5 minutes), arrange the kale on top of it, and cover the pan with a lid for about 3 minutes to wilt the kale.
- Uncover and stir to coat the kale with oil. Cook for an additional 10–15 minutes, or until the kale is tender.
- Add red pepper flakes and salt to taste. Serve immediately.
